E un drum lung din Rom&#226;nia p&#226;n&#259; la Marea Egee &#8212; suficient de lung &#238;nc&#226;t, dac&#259; nu e&#537;ti preg&#259;tit, primul lucru pe care &#238;l pierzi nu e bagajul&#8230; ci progresul t&#259;u.</p><p>Am &#238;nv&#259;&#539;at asta pe pielea mea acum c&#226;&#539;iva ani.</p><p>Epuizat, fl&#259;m&#226;nd, cu rafturile sta&#539;iilor de benzin&#259; chem&#226;ndu-m&#259;&#8230; chipsuri, ciocolat&#259;, b&#259;uturi dulci. Spui &#8222;doar de data asta&#8221;, dar nu e niciodat&#259; doar o dat&#259;.</p><p>Acum? Planific din timp. M&#259; &#238;ntind, merg 10 minute pe jos, m&#259;n&#226;nc un snack sau beau ap&#259;. &#206;mi v&#259;d harta dinainte &#8212; &#537;tiu unde sunt benzin&#259;riile bune pentru o oprire.</p><h4>Ce m&#259;n&#226;nc la plaj&#259;</h4><p>Dimine&#539;ile sunt pentru sc&#259;ldat &#8212; &#238;nainte ca soarele s&#259; devin&#259; prea puternic &#537;i vitamina D s&#259; nu mai fie absorbit&#259; (da, medicii spun c&#259; dup&#259; ora 11:00, pielea nu o mai prime&#537;te la fel). Atunci iau o cafea sau un pahar cu ap&#259;, poate un ceai rece f&#259;r&#259; zah&#259;r.</p><p>Dar adev&#259;ratul secret de la plaj&#259;?</p><p>Fructele.</p><p>Iau cu mine, depinde de ziua &#537;i pofta, piersici, nectarine, caise &#8212; coapte, aromate, suculente a&#537;a cum doar fructele grece&#537;ti de var&#259; pot fi. Aceea&#537;i logic&#259; se aplic&#259; &#537;i corpului.</p><p>Problema e c&#259; majoritatea dietelor atac&#259; exact sistemul care &#539;ine totul &#238;n echilibru. Reduc m&#226;ncarea, reduc pl&#259;cerea, reduc flexibilitatea &#8212; &#537;i apoi se mir&#259; c&#259; omul se simte frustrat, obosit &#537;i abandoneaz&#259;. Nu e o chestiune de voin&#539;&#259; slab&#259;. Semnaleaz&#259; creierului c&#259; e timpul s&#259; caute hran&#259; &#537;i activeaz&#259; circuitele de foame, inclusiv prin hipotalamus.                             <strong>Leptina</strong>, produs&#259; de &#539;esutul adipos, semnaleaz&#259; rezervele de energie &#537;i fr&#226;neaz&#259; c&#259;utarea de hran&#259;. &#206;n mod normal, cele dou&#259; lucreaz&#259; &#238;mpreun&#259; ca accelera&#539;ia &#537;i fr&#226;na unui sistem bine reglat. Dar c&#226;nd somnul e prost, c&#226;nd restric&#539;ia alimentar&#259; e sever&#259; sau c&#226;nd exist&#259; rezisten&#539;&#259; la leptin&#259;, sistemul nu mai comunic&#259; limpede &#8212; iar corpul r&#259;spunde prin foame, poft&#259; &#537;i tendin&#539;&#259; de recuperare a greut&#259;&#539;ii.</p><p><strong>GLP-1 &#537;i PYY</strong> sunt parte din semnalele de sa&#539;ietate. Spun creierului c&#259; masa a fost suficient&#259;. <strong>Insulina</strong> nu &#539;ine doar de zah&#259;r &#8212; face parte din modul &#238;n care corpul gestioneaz&#259; energia &#537;i transmite informa&#539;ii despre disponibilitatea nutri&#539;ional&#259;.                        <strong>Cortizolul</strong>, hormonul de stres, cre&#537;te c&#226;nd organismul e supus la tensiune psihic&#259; sau somn insuficient &#537;i poate &#238;mpinge spre poft&#259;, spre alimente foarte palatabile &#537;i spre decizii alimentare mai slabe.</p><p><strong>Dopamina</strong> nu e simplu &#8222;hormonul pl&#259;cerii.&#8221; &#538;ine mai ales de motiva&#539;ie, anticiparea recompensei &#537;i dorin&#539;a de a c&#259;uta ceva care promite satisfac&#539;ie.            <strong>Serotonina</strong> e mai legat&#259; de stabilitate, calm, sa&#539;ietate &#537;i controlul impulsului. C&#226;nd dieta devine prea sever&#259;, sistemul de recompens&#259; cere compensa&#539;ie, iar sistemul de sa&#539;ietate nu mai reu&#537;e&#537;te s&#259; &#539;in&#259; echilibrul. Unul &#238;mpinge spre &#8222;vreau&#8221;, cel&#259;lalt spre &#8222;ajunge&#8221; &#8212; &#537;i c&#226;nd primul c&#226;&#537;tig&#259; constant, &#537;tim cu to&#539;ii cum se termin&#259;.</p><p><strong>Endorfinele &#537;i oxitocina </strong>completeaz&#259; tabloul din zona confortului &#537;i a bunei dispozi&#539;ii asociate cu masa, mi&#537;carea, contactul social &#537;i reducerea stresului. Nu sunt piese decorative. Sunt parte din felul &#238;n care organismul decide dac&#259; o experien&#539;&#259; merit&#259; repetat&#259;.</p><p>Asta &#238;nseamn&#259; c&#259; lucrurile sunt mai complicate dec&#226;t simplul &#8222;m&#259;n&#226;nc&#259; mai pu&#539;in&#8221; &#537;i gat&#259;. Tr&#259;im &#238;ntr-un sistem care r&#259;spunde la context. C&#226;nd dormi pu&#539;in, controlul apetitului se tulbur&#259;. C&#226;nd te mi&#537;ti prea pu&#539;in, corpul pierde semnalele care sus&#539;in flexibilitatea metabolic&#259;. C&#226;nd stresul e mare, pl&#259;cerea rapid&#259; devine mai tentant&#259;. M&#226;ncarea nu e doar combustibil. E &#537;i semnal. E &#537;i recompens&#259;. E &#537;i calmare. E &#537;i obicei. O diet&#259; care vede doar combustibilul va merge &#238;mpotriva biologiei, nu &#238;mpreun&#259; cu ea.</p><h4>Pl&#259;cerea nu e du&#537;manul</h4><p>Cercet&#259;rile despre eating pleasure arat&#259; c&#259; anumite forme de pl&#259;cere pot fi asociate cu alegeri mai bune, por&#539;ii mai mici &#537;i o stare general&#259; mai bun&#259;. Diferen&#539;a nu e &#238;ntre pl&#259;cere &#537;i s&#259;n&#259;tate. E &#238;ntre pl&#259;cerea con&#537;tient&#259; &#537;i pl&#259;cerea compulsiv&#259;.</p><p>O persoan&#259; poate avea mese pl&#259;cute, satisf&#259;c&#259;toare &#537;i totu&#537;i controlate. Poate m&#226;nca cu gust &#537;i f&#259;r&#259; s&#259; intre &#238;n exces. Problema apare c&#226;nd dieta transform&#259; fiecare mas&#259; &#238;ntr-o pedeaps&#259; &#537;i fiecare poft&#259; &#238;ntr-o vin&#259;. Atunci omul nu mai &#238;nva&#539;&#259; s&#259; se hr&#259;neasc&#259; bine. &#206;nva&#539;&#259; doar s&#259; reziste. &#536;i rezisten&#539;a are limit&#259;.</p><p>Alimenta&#539;ia emo&#539;ional&#259; apare exact aici &#8212; c&#226;nd m&#226;ncarea devine instrument de lini&#537;tire, nu doar de hr&#259;nire. Stresul, anxietatea, plictiseala, oboseala sau singur&#259;tatea pot schimba decizia alimentar&#259; &#537;i &#238;mpinge spre alimente mai dense energetic &#537;i mai greu de oprit. Ci pentru c&#259; sistemul nervos nu accept&#259; la infinit o strategie care &#238;l las&#259; gol.</p><h4>Somnul &#537;i mi&#537;carea</h4><p><strong>Somnul</strong> e una dintre piesele care &#539;in tot sistemul stabil. C&#226;nd e scurt sau prost, apetitul se deregleaz&#259; &#8212; grelina cre&#537;te, semnalele de sa&#539;ietate se tulbur&#259;, corpul obosit cere mai mult&#259; energie &#537;i o cere mai haotic.</p><p><strong>Mi&#537;carea</strong> are acela&#537;i rol de reglare. Nu &#238;nseamn&#259; doar calorii arse. &#206;nseamn&#259; semnal biologic: p&#259;streaz&#259; mu&#537;chiul, p&#259;streaz&#259; func&#539;ia, p&#259;streaz&#259; sensibilitatea metabolic&#259;. Activitatea fizic&#259; sus&#539;ine controlul apetitului &#537;i ajut&#259; la o rela&#539;ie mai bun&#259; cu energia, mai ales c&#226;nd vine la pachet cu somn suficient &#537;i alimenta&#539;ie coerent&#259;.</p><p>Dac&#259; doarme prost, m&#259;n&#226;nc&#259; prost. Dac&#259; se mi&#537;c&#259; pu&#539;in, se adapteaz&#259; prost. Dac&#259; e stresat, caut&#259; scurt&#259;turi. Dac&#259; e &#539;inut &#238;n restric&#539;ie sever&#259;, r&#259;spunde prin foame, oboseal&#259; &#537;i, adesea, abandon. Nu e opinie. E biologie observabil&#259;.</p><h4>Medicamentele</h4><p>Medicamentele din clasa GLP-1 &#8212; semaglutida, tirzepatida &#8212; reduc apetitul &#537;i cresc sa&#539;ietatea tocmai pentru c&#259; folosesc mecanisme reale ale organismului. Sunt instrumente terapeutice serioase pentru cine are nevoie medical&#259; real&#259;. Merit&#259; citit.</p><h4>Ce se &#238;nt&#226;mpl&#259; c&#226;nd opre&#537;ti</h4><p>Acesta e capitolul pe care industria nu &#238;l promoveaz&#259;.</p><p>Rec&#226;&#537;tigarea greut&#259;&#539;ii dup&#259; oprire este frecvent&#259; &#537;i bine documentat&#259; &#8212; studiile arat&#259; c&#259; participan&#539;ii au rec&#226;&#537;tigat aproximativ dou&#259; treimi din pierderea ini&#539;ial&#259; dup&#259; un an. Apetitul revine. Greutatea revine. Dar obiceiurile nu s-au schimbat automat &#238;n timp ce seringa f&#259;cea treaba. Rela&#539;ia cu m&#226;ncarea e aceea&#537;i. Mi&#537;carea e aceea&#537;i. Singurul lucru care s-a schimbat e c&#259; acum corpul poate fi mai mic temporar &#8212; cu oase mai fragile &#537;i mas&#259; muscular&#259; mai pu&#539;in&#259; dec&#226;t &#238;nainte de a &#238;ncepe.</p><p>Nu e un argument &#238;mpotriva medicamentului pentru cine are nevoie real&#259;. E un argument &#238;mpotriva iluziei c&#259; exist&#259; un final al pove&#537;tii dup&#259; care nu mai trebuie s&#259; faci nimic.</p><h4>Dac&#259; folose&#537;ti un GLP-1, acestea conteaz&#259;</h4><p>Pierderea &#238;n greutate &#537;i &#238;mbun&#259;t&#259;&#539;irea compozi&#539;iei corporale nu sunt acela&#537;i lucru. Un corp mai mic nu e automat un corp mai puternic sau mai s&#259;n&#259;tos.</p><p><strong>Proteinele conteaz&#259;</strong> &#8212; c&#226;nd apetitul e suprimat, primul lucru pe care &#238;l sacrific&#259; mul&#539;i oameni f&#259;r&#259; s&#259; realizeze e aportul proteic. Iar f&#259;r&#259; proteine suficiente, corpul pl&#259;te&#537;te din mu&#537;chi. </p><p><strong>Antrenamentul cu rezisten&#539;&#259; conteaz&#259; </strong>&#8212; f&#259;r&#259; stimul mecanic, nici oasele &#537;i nici mu&#537;chii nu au motiv s&#259; se men&#539;in&#259;. Mi&#537;carea nu e op&#539;ional&#259; c&#226;nd iei aceste medicamente, e parte din tratament. &#536;i a sl&#259;bi nu &#238;nseamn&#259; a te vindeca &#8212; dac&#259; la cap&#259;tul drumului e&#537;ti mai mic dar mai slab, mai fragil &#537;i cu acelea&#537;i obiceiuri, nu ai c&#226;&#537;tigat ce credeai c&#259; ai c&#226;&#537;tigat.</p><h4>Cine c&#226;&#537;tig&#259; &#537;i cine nu &#238;ntreab&#259;</h4><p>Tot mai multe persoane &#8212; tinere &#537;i nu numai &#8212; caut&#259; activ un medic care s&#259; le prescrie un GLP-1, nu pentru c&#259; au diabet sau obezitate sever&#259;, ci pentru c&#259; vor s&#259; sl&#259;beasc&#259; repede &#537;i f&#259;r&#259; efort. Despre efectele secundare nu &#238;ntreab&#259; mare lucru. Despre ce &#238;nseamn&#259; s&#259; ar&#259;&#539;i slab fa&#539;&#259; de s&#259; fii activ, puternic &#537;i cu adev&#259;rat s&#259;n&#259;tos &#8212; nici at&#226;t. Vor rezultatul din poz&#259;.</p><p>Industria farmaceutic&#259; c&#226;&#537;tig&#259; de fiecare dat&#259; c&#226;nd o nou&#259; persoan&#259; &#238;ncepe tratamentul. C&#226;&#537;tig&#259; &#537;i c&#226;nd &#238;l opre&#537;te &#537;i recap&#259;t&#259; greutatea. C&#226;&#537;tig&#259; din ambele capete ale aceleia&#537;i pove&#537;ti. &#536;i &#238;ntre timp nimeni nu bate clopotele de alarm&#259; &#8212; nu &#238;n mod serios, nu suficient de tare &#238;nc&#226;t s&#259; se aud&#259; peste zgomotul de marketing.</p><p>Nu trebuie s&#259; a&#537;tept&#259;m p&#226;n&#259; c&#226;nd paguba e evident&#259; &#238;n fiecare pacient ca s&#259; numim un efect secundar pe numele lui. Medicina ar trebui s&#259; urmeze dovezile, nu marketingul. Iar c&#226;nd autorit&#259;&#539;ile de reglementare actualizeaz&#259; prospectul, e momentul s&#259; nu mai pretindem c&#259; riscul e imaginar.</p><p>Noi &#238;l numim. Arome de fructe, vanilie, ambalaj atractiv &#537;i promisiunea unui plus de proteine al&#259;turi de ceva ce p&#259;rea un mic r&#259;sf&#259;&#539; zilnic. Am ad&#259;ugat unul &#238;n rutina mea &#8212; unul pe zi, dup&#259; mas&#259;, ca un fel de desert care p&#259;rea o alegere inteligent&#259;.</p><p>O lun&#259; mai t&#226;rziu, am observat c&#259; procesul meu de sl&#259;bire se blocase. Totul &#238;n rest era la fel. M-am &#238;ntrebat ce schimbasem, iar r&#259;spunsul era iaurtul. A&#537;a c&#259; am citit cu aten&#539;ie eticheta pentru prima dat&#259; &#8212; nu fa&#539;a, ci spatele. Amidon, zaharuri din fructe &#537;i valori nutri&#539;ionale calculate per 100 de grame, &#238;n timp ce ambalajul avea 180. Produsul nu min&#539;ea direct. Dar era conceput astfel &#238;nc&#226;t numerele s&#259; arate mai bine dec&#226;t realitatea.</p><p>&#206;n acea lun&#259; am &#238;nceput s&#259; citesc etichetele corect. &#536;i ce am descoperit este un subiect care merit&#259; un articol &#238;ntreg.</p><h4>Fa&#539;a ambalajului este publicitate</h4><p>Primul lucru pe care &#238;l vezi &#238;ntr-un supermarket este fa&#539;a ambalajului. Litere mari, culori vii &#537;i cuvinte precum &#8222;f&#259;r&#259; zah&#259;r&#8221;, &#8222;bogat &#238;n proteine&#8221;, &#8222;bio&#8221;, &#8222;natural&#8221; sau &#8222;vegan&#8221;. Este conceput s&#259; te fac&#259; s&#259; te sim&#539;i bine c&#226;nd &#238;ntinzi m&#226;na dup&#259; el, &#238;nainte de a fi citit un singur num&#259;r. Acea stare este produsul. Fa&#539;a ambalajului nu &#238;nseamn&#259; informa&#539;ie &#8212; &#238;nseamn&#259; marketing. Informa&#539;ia real&#259; se afl&#259; &#238;n scrisul mic de pe spate, iar acolo are loc, de fapt, adev&#259;rata conversa&#539;ie &#238;ntre tine &#537;i produc&#259;tor.</p><p>Majoritatea oamenilor nu ajung niciodat&#259; acolo. Fa&#539;a &#238;&#537;i face treaba.</p><h4>De ce conteaz&#259; asta dac&#259; &#238;ncerci s&#259; sl&#259;be&#537;ti</h4><p>Un produs poate s&#259; par&#259; s&#259;n&#259;tos &#537;i totu&#537;i s&#259; lucreze &#238;mpotriva a tot ceea ce &#238;ncerci s&#259; faci. Poate fi dens caloric, s&#259;rac &#238;n proteine, lipsit de fibre &#537;i conceput special ca s&#259; te fac&#259; s&#259; vrei mai mult &#238;n maximum o or&#259;. Eticheta nu va anun&#539;a nimic din toate astea. &#206;ntr-un mod legal, &#238;&#539;i va ar&#259;ta doar ceea ce este obligat&#259; prin lege s&#259; arate &#537;i o va &#238;mpacheta &#238;n cel mai favorabil mod pe care &#238;l permite legisla&#539;ia.</p><p>Cea mai util&#259; &#238;ntrebare pe care o po&#539;i pune &#238;n fa&#539;a oric&#259;rui aliment ambalat nu este &#8222;e s&#259;n&#259;tos?&#8221;, ci &#8222;&#238;mi va &#539;ine de foame?&#8221;. Sa&#539;ietatea depinde de proteine, de fibre, de gradul de procesare &#537;i de modul &#238;n care alimentul se comport&#259; efectiv &#238;n organism &#8212; nu de faptul c&#259; pe fa&#539;a ambalajului este imprimat&#259; o frunz&#259;, o bif&#259; sau cuv&#226;ntul &#8222;natural&#8221;.</p><p>O etichet&#259; te poate ajuta s&#259; r&#259;spunzi la aceast&#259; &#238;ntrebare, dar numai dac&#259; &#537;tii unde s&#259; te ui&#539;i &#537;i ce s&#259; cite&#537;ti.</p><h4>Tabelul nutri&#539;ional &#8212; ce conteaz&#259; cu adev&#259;rat</h4><p>&#206;n UE, tabelul nutri&#539;ional este obligatoriu prin lege &#537;i trebuie s&#259; arate valoarea energetic&#259;, gr&#259;simile, acizii gra&#537;i satura&#539;i, carbohidra&#539;ii, zaharurile, proteinele &#537;i sarea. Trebuie s&#259; apar&#259; per 100 de grame sau 100 de mililitri, iar produc&#259;torii pot afi&#537;a &#238;n paralel &#537;i valorile per por&#539;ie.</p><p>Cifra per 100 de grame este aproape &#238;ntotdeauna mai sincer&#259; dec&#226;t cea per por&#539;ie. Produc&#259;torii definesc singuri por&#539;iile, iar o por&#539;ie poate fi stabilit&#259; la orice dimensiune care face ca num&#259;rul de calorii, zah&#259;rul &#537;i gr&#259;simile s&#259; arate c&#226;t mai atractiv. O pung&#259; din ceva conceput pentru a fi m&#226;ncat dintr-o singur&#259; mi&#537;care poate afi&#537;a o por&#539;ie ca fiind jum&#259;tate de pung&#259;. Numerele per por&#539;ie vor p&#259;rea rezonabile. Numerele per 100 de grame &#238;&#539;i vor spune ce este produsul cu adev&#259;rat.</p><p>C&#226;nd compari dou&#259; produse similare &#8212; dou&#259; iaurturi, dou&#259; batoane de cereale, dou&#259; gust&#259;ri &#8212; compari &#238;ntotdeauna per 100 de grame. Este singurul num&#259;r care pune ambele produse pe picior de egalitate.</p><blockquote><p><strong>&#206;n cuvinte simple</strong>: ignor&#259; num&#259;rul per por&#539;ie, cu excep&#539;ia cazului &#238;n care e&#537;ti sigur c&#259; por&#539;ia afi&#537;at&#259; este exact ceea ce m&#259;n&#226;nci. Compar&#259; totul per 100 de grame. Acolo se afl&#259; adev&#259;rul.</p></blockquote><h4>Lista de ingrediente &#8212; cea mai sincer&#259; parte a etichetei</h4><p>Dac&#259; tabelul nutri&#539;ional &#238;&#539;i arat&#259; numerele, lista de ingrediente &#238;&#539;i arat&#259; realitatea din spatele lor. Ingredientele sunt enumerate &#238;n ordine descresc&#259;toare dup&#259; greutate, ceea ce &#238;nseamn&#259; c&#259; primele trei ingrediente &#238;&#539;i spun ce este produsul &#238;n esen&#539;&#259;. Dac&#259; primul ingredient este zah&#259;rul, f&#259;ina rafinat&#259; sau siropul, produsul este construit &#238;n jurul acelor lucruri, indiferent de ceea ce sus&#539;ine fa&#539;a ambalajului.</p><p>Aici devine vizibil&#259; capcana lui &#8222;f&#259;r&#259; zah&#259;r ad&#259;ugat&#8221;. Un produs poate purta legal aceast&#259; men&#539;iune &#238;n timp ce primele sale trei ingrediente sunt curmalele, smochinele &#537;i stafidele &#8212; toate acestea fiind surse concentrate de zah&#259;r care afecteaz&#259; glicemia &#537;i aportul caloric &#238;n moduri care nu difer&#259; semnificativ de zah&#259;rul rafinat. Men&#539;iunea este corect&#259; din punct de vedere legal. Impresia pe care o creeaz&#259; nu este.</p><p>Batoanele energizante &#537;i gust&#259;rile marketate ca fiind naturale sau vegane sunt exemple deosebit de comune &#238;n acest sens. Ele &#238;nlocuiesc zah&#259;rul rafinat cu zaharuri din fructe, ceea ce permite men&#539;iunea &#8222;f&#259;r&#259; zah&#259;r ad&#259;ugat&#8221;, de&#537;i aduc un num&#259;r similar de calorii &#537;i au un efect similar asupra organismului. Lista de ingrediente &#238;&#539;i va ar&#259;ta asta imediat. Fa&#539;a ambalajului nu va scoate o vorb&#259;.</p><blockquote><p><strong>&#206;n cuvinte simple</strong>: cite&#537;te primele trei ingrediente &#238;nainte de orice altceva. Ele &#238;&#539;i spun ce este produsul cu adev&#259;rat. Dac&#259; nu le recuno&#537;ti sau nu le po&#539;i pronun&#539;a, &#537;i asta este o informa&#539;ie.</p></blockquote><h4>Ce &#238;nseamn&#259; de fapt men&#539;iunile de pe ambalaj</h4><p>Legisla&#539;ia UE privind etichetarea alimentelor define&#537;te cu precizie ace&#537;ti termeni, iar &#238;n&#539;elegerea a ceea ce &#238;nseamn&#259; &#8212; &#537;i a ceea ce nu &#238;nseamn&#259; &#8212; schimb&#259; modul &#238;n care cite&#537;ti un ambalaj.</p><p><strong>&#8222;F&#259;r&#259; zah&#259;r&#8221;</strong> &#238;nseamn&#259; c&#259; nu au fost ad&#259;ugate mono- sau dizaharide &#537;i niciun alt ingredient cu rol de &#238;ndulcire. Nu &#238;nseamn&#259; c&#259; produsul nu con&#539;ine zah&#259;r. Zaharurile prezente &#238;n mod natural &#238;n fructe, lactate sau alte ingrediente sunt acolo &#537;i nu sunt acoperite de aceast&#259; men&#539;iune. Un produs poate fi certificat organic &#537;i totu&#537;i s&#259; fie plin de zah&#259;r, s&#259;rac &#238;n proteine &#537;i lipsit de sa&#539;ietate. Metoda de produc&#539;ie &#537;i impactul nutri&#539;ional sunt dou&#259; lucruri complet separate, iar eticheta rareori &#238;&#539;i va aminti asta.</p><p><strong>&#8222;Light&#8221; sau &#8222;lite&#8221;</strong> &#238;nseamn&#259; c&#259; produsul are un con&#539;inut redus la cel pu&#539;in un nutrient &#8212; de obicei gr&#259;simi sau calorii &#8212; &#238;n compara&#539;ie cu versiunea standard. Nu &#238;nseamn&#259; c&#259; produsul este bun pentru sl&#259;bit. Un produs light care &#238;nlocuie&#537;te gr&#259;simea cu zah&#259;r &#537;i &#238;ngro&#537;&#259;tori poate avea mai pu&#539;ine calorii per 100 de grame &#537;i totu&#537;i s&#259; fie mai pu&#539;in s&#259;&#539;ios dec&#226;t o cantitate mai mic&#259; din versiunea original&#259;, integral&#259;.</p><blockquote><p><strong>&#206;n cuvinte simple</strong>: men&#539;iunile de pe fa&#539;a ambalajului sunt definite prin lege &#537;i, adesea, sunt corecte din punct de vedere tehnic. Totu&#537;i, ele sunt selectate &#537;i pozi&#539;ionate special pentru a crea o impresie mai favorabil&#259; dec&#226;t imaginea de ansamblu. Dar exist&#259; un reper util pentru alimentele ambalate, care &#238;&#539;i ofer&#259; un prim filtru rapid.</p><p><strong>Proteine</strong> &#8212; pentru ca un produs s&#259; sus&#539;in&#259; cu adev&#259;rat sa&#539;ietatea, caut&#259; cel pu&#539;in 8 p&#226;n&#259; la 10 grame per 100 de grame &#238;n alimentele de zi cu zi, &#537;i mai mult dac&#259; produsul este pozi&#539;ionat specific ca fiind unul proteic. Proteinele animale naturale &#8212; carnea, pe&#537;tele, ou&#259;le, lactatele &#8212; ofer&#259; acest lucru f&#259;r&#259; aditivi.</p><p><strong>Zah&#259;r</strong> &#8212; cu c&#226;t mai pu&#539;in, cu at&#226;t mai bine. Sub 5 grame per 100 de grame este un prag rezonabil pentru majoritatea alimentelor ambalate. Sub un gram &#238;nseamn&#259;, practic, zero.</p><p><strong>Gr&#259;simi</strong> &#8212; nu sunt automat o problem&#259;, dar merit&#259; s&#259; verifici de unde provin. Gr&#259;simea din uleiul de m&#259;sline, nuci sau lactate se comport&#259; diferit &#238;n organism fa&#539;&#259; de gr&#259;simea din uleiurile vegetale hidrogenate. Lista de ingrediente &#238;&#539;i va spune cu ce ai de-a face.</p><p><strong>Calorii</strong> &#8212; compar&#259;-le per 100 de grame &#238;n paralel cu proteinele &#537;i fibrele, nu izolat. Un produs care este dens caloric, dar bogat &#238;n proteine &#537;i fibre, poate fi mai util pentru sa&#539;ietate dec&#226;t un produs cu mai pu&#539;ine calorii, dar aproape f&#259;r&#259; proteine sau fibre.</p><blockquote><p><strong>&#206;n cuvinte simple</strong>: suficiente proteine, nu prea mult zah&#259;r, ceva fibre &#537;i gr&#259;simi din surse pe care le po&#539;i identifica. Aceste patru &#238;ntreb&#259;ri vor filtra majoritatea produselor care par s&#259;n&#259;toase, dar nu sunt.</p></blockquote><h4>O list&#259; simpl&#259; de verificare pentru supermarket</h4><p>Nu trebuie s&#259; devii nutri&#539;ionist ca s&#259; cite&#537;ti bine etichetele. Ai nevoie doar de o scurt&#259; rutin&#259; care s&#259; devin&#259; automat&#259; &#238;n timp.</p><ul><li><p>Verific&#259; mai &#238;nt&#226;i dimensiunea por&#539;iei &#8212; este realist&#259; sau pare conceput&#259; doar ca s&#259; fac&#259; numerele s&#259; par&#259; mai mici dec&#226;t sunt &#238;n realitate?</p></li><li><p>Compar&#259; per 100 de grame, nu per por&#539;ie, c&#226;nd pui &#238;n balan&#539;&#259; produse din aceea&#537;i categorie.</p></li><li><p>Cite&#537;te primele trei ingrediente &#8212; ele &#238;&#539;i spun ce este produsul cu adev&#259;rat.</p></li><li><p>Caut&#259; zah&#259;rul sub toate denumirile sale &#8212; curmale, miere, siropuri, suc concentrat de fructe, fructoz&#259;, maltoz&#259;, dextroz&#259; &#537;i orice ingredient care se termin&#259; &#238;n &#8222;-oz&#259;&#8221; sunt surse de zah&#259;r.</p></li><li><p>Nu avea &#238;ncredere &#238;n men&#539;iunile de pe fa&#539;&#259; &#8212; cite&#537;te spatele.</p></li><li><p>.Pune-&#539;i singura &#238;ntrebare care conteaz&#259; pentru obiectivele tale: &#238;mi va &#539;ine de foame sau voi c&#259;uta altceva de m&#226;ncare &#238;ntr-o or&#259;?</p></li></ul><h4>Verific&#259; totul</h4><p>Etichetele nu reprezint&#259; adev&#259;rul. Numerele &#537;i ingredientele sunt adev&#259;rul. Un ambalaj poate purta toate men&#539;iunile lini&#537;titoare din lume &#537;i totu&#537;i s&#259; lucreze &#238;mpotriva a ceea ce &#238;ncerci s&#259; ob&#539;ii.</p><blockquote><p>Nu fa&#539;a. Spatele. Numerele, ingredientele &#537;i men&#539;iunile &#8212; cite&#537;te-le &#238;n&#539;eleg&#226;nd c&#259; au fost scrise de oameni a c&#259;ror meserie este s&#259; te fac&#259; s&#259; cumperi, nu s&#259; te sature.</p></blockquote><h4>Scurt&#259;tura</h4><p>Dincolo de tot ce am discutat aici, mai exist&#259; o abordare &#8212; cea simplificat&#259;, pe care o folosesc pentru mine. &#206;ntreab&#259;-te unde se afl&#259;, de fapt, majoritatea acestor etichete &#238;n&#537;el&#259;toare. &#206;n ce zon&#259; a supermarketului g&#259;se&#537;ti batoanele energizante &#8222;f&#259;r&#259; zah&#259;r&#8221;, gust&#259;rile &#8222;bogate &#238;n proteine&#8221;, biscui&#539;ii &#8222;bio&#8221; sau pastele tartinabile &#8222;naturale&#8221;?</p><p>Eu le numesc <strong>coridoarele interzise.</strong> Culoarele cu gust&#259;ri ambalate, dulciuri, chestii crocante, tablete de ciocolat&#259;, batoane de fitness &#537;i orice are nevoie de o men&#539;iune de s&#259;n&#259;tate pe fa&#539;&#259; pentru a-&#537;i justifica existen&#539;a. Evit&#259;-le din reflex &#537;i elimini cea mai mare parte a problemei etichetelor &#238;nainte ca ea s&#259; &#238;nceap&#259;. Nu o dat&#259; pe lun&#259; &#8212; am &#238;ncercat, nu func&#539;ioneaz&#259; pentru mine. Raioanele cu dulciuri, biscui&#539;i, ciocolat&#259;, patiserie, b&#259;uturi carbogazoase &#8212; le ocolesc complet. Nu este voin&#539;&#259;. Le &#537;tiam bine. Proteine, fibre, gr&#259;simi rezonabile. Cam acelea&#537;i sfaturi peste tot. Problema n-au fost niciodat&#259; regulile. Ci ceea ce se &#238;nt&#226;mpla dup&#259; ce dieta se termina &#537;i planul nu mai era supravegheat. Te duci acas&#259;, deschizi frigiderul &#537;i te &#238;ntorci la aceea&#537;i &#238;ntrebare.</p><p>Nu po&#539;i tr&#259;i cu piept de pui la gr&#259;tar &#537;i broccoli la nesf&#226;r&#537;it. Nu dac&#259; vrei o via&#539;&#259;. Nu dac&#259; vrei consecven&#539;&#259;. Acea &#238;ntrebare a fost sc&#226;nteia. &#536;i este &#238;n continuare cea corect&#259;.</p><p>Dup&#259; un an, Flavors &amp; Balance a devenit locul unde mi-am pus via&#539;a cu m&#226;ncarea pe h&#226;rtie. Cum g&#226;ndesc nutri&#539;ia. Ce am &#238;nv&#259;&#539;at &#238;n buc&#259;t&#259;rii &#537;i &#238;n ospitalitate. Ce a func&#539;ionat pentru mine c&#226;nd am sl&#259;bit &#537;i la ce lucrez &#238;nc&#259; &#537;i acum, pentru c&#259; nu am terminat.</p><p>Acest spa&#539;iu poart&#259;, de asemenea, pozi&#539;ia mea fa&#539;&#259; de sistemul &#238;n care tr&#259;im &#537;i modul &#238;n care acesta lucreaz&#259; discret &#238;mpotriva noastr&#259;. Pe m&#226;ncare care te men&#539;ine s&#259;tul, calm &#537;i capabil s&#259;-&#539;i continui ziua. Nu restric&#539;ie. Nu pedeaps&#259;. Nu jocuri de disciplin&#259;.</p><p>Dac&#259; am o dorin&#539;&#259; pentru ce fac, este aceasta: s&#259; devin&#259; un loc unde oamenii schimb&#259; m&#226;ncare care func&#539;ioneaz&#259; cu adev&#259;rat. Re&#539;ete care &#238;i satur&#259;. Farfurii pe care le pot repeta. Conversa&#539;ii &#238;ntre oameni care s-au s&#259;turat s&#259; fie certa&#539;i &#537;i vor doar s&#259; m&#259;n&#226;nce mai bine.</p><p>Obezitatea este &#238;n sf&#226;r&#537;it privit&#259; ca o boal&#259;, nu ca un e&#537;ec moral. Sper c&#259; ceea ce aduc aici poate face parte din partea mai discret&#259; a acestui ajutor. F&#259;r&#259; strig&#259;te. F&#259;r&#259; predici. Doar g&#259;tind, g&#226;ndind &#537;i &#238;mp&#259;rt&#259;&#537;ind.</p><p>&#536;i pentru c&#259; singura modalitate onest&#259; de a spune toate astea este s&#259; continui munca, iat&#259; ce am M&#226;ncare care te satur&#259; f&#259;r&#259; s&#259; te sim&#539;i greu.</p><h5>De ce ai nevoie (3&#8211;4 por&#539;ii):</h5><p>&#183; 1 kg pulpe de pui dezosate, f&#259;r&#259; piele</p><p>&#183; 2 cepe mari, t&#259;iate &#238;n felii groase</p><p>&#183; 3&#8211;4 ardei (ro&#537;ii sau verzi), t&#259;ia&#539;i &#238;n buc&#259;&#539;i mari</p><p>&#183; 1&#189; lingur&#259; mu&#537;tar clasic sau Dijon</p><p>&#183; 1&#189; linguri&#539;&#259; boia dulce</p><p>&#183; 2 linguri ulei de m&#259;sline</p><p>&#183; 150 ml vin alb sec</p><p>&#183; Sare &#537;i piper negru</p><h5> </h5><p>&#536;terge&#539;i bine puiul cu un prosop de h&#226;rtie &#537;i pune&#539;i-l &#238;ntr-un bol.
